The Bagel Upgrade You Didn’t Know You Needed: 852 Bakery’s Shio Pan Bagels

Bread lovers in Dubai, meet your newest obsession. 852 Bakery has launched the Shio Pan Bagel, a playful hybrid inspired by Japan’s cult-favourite Shio Pan and the classic New York bagel.

The Shio Pan Bagel starts with classic bagel dough layered with butter before being boiled and baked to golden perfection. The result is everything you want in one bite: a crisp, glossy exterior, signature bagel chew, feather-light centre and rich buttery finish, topped with flaky sea salt for the perfect hit of crunch.

While dangerously good on its own, the Shio Pan Bagel is also a delicous way to enjoy any of 852 Bakery’s signature sandwiches, including the indulgent Shio Pan Tuna Melt layered with house-made tuna salad, scallions, red onion, jalapeño, mozzarella and American cheese, a comforting flavour-loaded twist on the classic melt. Diners can swap any sandwich onto a Shio Pan Bagel, or order the bagels individually for pick-up or delivery whenever the craving strikes.

Beyond the Shio Pan Bagel, the 852 Bakery menu is packed with cult favourites including the Southside Parm, crispy gluten-free chicken parmesan layered with spicy mapo arrabbiata, mozzarella, parmesan and giardiniera on a garlic-toasted bagel; alongside handcrafted bagels served with house-made flavoured cream cheeses like the addictive Kimchi Cream Cheese made using in-house fermented kimchi.

Then there’s the legendary Hong Kong Pineapple Bun. Despite the name, it contains no pineapple at all. Instead, it’s named after the signature golden crackled crust baked to resemble the skin of a pineapple. One of the only places in the UAE serving authentic Hong Kong-style pineapple buns, 852 Bakery stuffs theirs with thick slabs of cold salted French butter tucked into the warm bun, best enjoyed dipped into a hot coffee.

The drinks menu follows the same globally inspired philosophy. Highlights include the Apple Butter Tea, inspired by the butter teas traditionally enjoyed in the hill stations of India, reimagined with fresh apple and apple brown butter for a rich, warming finish. Other favourites include the Iced Matcha Coconut, Matcha Mango Sago and the nostalgic Iced Parle G Latte.

Operating as a pop-up inside Jun’s in Downtown Dubai, 852 Bakery blends influences from Hong Kong, Dubai and the travels of Chef Kelvin Cheung to create one of the city’s most exciting bakery concepts.
