This summer, Above Eleven invites’ guests to embark on a captivating culinary voyage through the diverse landscapes of Peru.

This journey runs until mid-September, Journey Through Peru promises an immersive experience of Peruvian cuisine. Spanning three unique and exclusive menus, each available for six weeks only, diners will be invited to explore Peru’s coastal, mountainous, and jungle regions through its cuisine.

Chapter 1: Coastal Cuisine

The first part of the culinary journey is the Coastal menu available until July 1st, 2024. Guests will indulge in a meticulously crafted four-course meal that pays homage to the vibrant flavours of Peru’s coastal cuisine. From the tangy zest of ceviche made with freshly caught local fish to succulent seafood dishes infused with native herbs and spices, each plate transports diners to the sandy shores of Peru. Key dishes include Ceviche, Anticucho, Arroz Norteno, and the iconic Pisco Sour cocktail. Every ingredient is carefully sourced from sustainable fisheries along Peru’s Pacific coast, ensuring the freshest and most authentic culinary experience.

Fun Fact: The ancient Moche civilization, which thrived along the northern coast of Peru from 100 to 700 AD, is believed to have been one of the first cultures to cultivate and consume potatoes.

Chapter 2: Andean Delights

From July 1st to August 18th, 2024, the focus shifts to Peru’s mountainous landscape. Menu two takes diners on a culinary expedition through the Andes, delve into the richness of quinoa, savor the earthy flavors of slow-cooked Andean stews, and experience the delicate balance of textures and tastes in dishes inspired by centuries-old recipes passed down through generations. Each ingredient tells a story of resilience and adaptation, sourced directly from local farmers and indigenous communities from the Andes. Key dishes include Lomo Saltado, Rocoto Relleno, and Pachamanca.

This chapter is priced at 350 AED if you adventured through chapter 1, chapter 2 is priced at 299 AED per person.

Chapter 3: Jungle Treasures

Finally, from August 18th to September, 2024, diners are encouraged to delve deep into the lush Peruvian jungle with the third menu from vibrant tropical fruits bursting with sweetness to aromatic spices that tantalize the senses, each dish offers a sensory exploration of one of the world’s most biodiverse regions. Key dishes include Juane, Tacacho con Cecina, and Inchicapi, which offers a tantalising glimpse into the culinary traditions of the Peruvian jungle.

Peru’s Amazon rainforest, home to an estimated 10% of the world’s known species, provides a fascinating backdrop to the culinary adventure. Ingredients are ethically sourced from indigenous communities, supporting sustainable practices that preserve the delicate ecosystem of the Amazon.

For those who have ventured through the flavourful landscape of chapters 1 & 2 of the Peruvian journey, this chapter is priced at 199AED per person. Otherwise this chapter is priced at 250 AED.

Each menu is presented in a beautifully illustrated scrapbook, inspired by Chef Luis’s own stories and learnings about Peru’s rich culinary heritage and biodiversity.
