This September, Dubai will welcome Cut Caviar, a Mediterranean-inspired restaurant and seafood experience set to open at the new iconic Mileo Hotel The Palm. Born between London and Dubai, Cut Caviar brings with it a global perspective and a refined approach to modern luxury dining.
Cut Caviar’s concept revolves around excellence in both sourcing and experience. Guests will discover exceptional caviars from carefully selected farms around the world, celebrated for their unique character and consistent quality. Alongside these, the restaurant showcases the finest seafood sourced directly from Sicily’s Deep Red fishing boats, offering premium prawns, langoustines, and delicacies that highlight the best of the Mediterranean.
The experience at Cut Caviar extends beyond the plate. With live cooking shows and interactive dining moments, guests are immersed in a performance-led journey of flavor and artistry. The venue will operate from 9 AM to 3 AM daily, serving everything from delicate Italian breakfast patisserie to refined à la carte dinners, late-night bites, and signature set menus.
Complementing the culinary experience, the second chapter of the concept will be a refined cocktail bar. A team of expert mixologists will craft a distinctive cocktail programme designed to pair seamlessly with the restaurant’s signature plates, while also offering guests an exceptional fine wine and champagne list.
