Born to a Chinese father and Malaysian mother, Chef Lai’s culinary artistry blends tradition with global influences and modernity. His journey began in his father’s friend’s small Cantonese restaurant, where he honed the skills and precision needed to craft traditional dishes. Over the years, his travels across Asia and beyond enriched his expertise, from perfecting dim sum in Hong Kong to exploring bold, rustic flavors in rural Malaysia and Southeast Asia.

The Chef’s Table dinner offers guests a personal experience through a heartfelt menu that reflects Chef Lai’s culinary evolution. The starters pay homage to his early years as a chef, while the mains celebrate the festive meals his family prepared for special occasions. This menu honors the vibrant flavors and techniques he’s explored, all presented with his signature refinement.
